Cheddar Chicken Spirals

Use up leftover cooked chicken in this simple casserole dish made with spiral pasta, mayo, mixed veggies, and cheddar cheese.

ingredients

1 1/2 cup uncooked spiral pasta
1/2 cup mayonnaise
1/3 cup milk
1/2 teaspoon salt
1/2 teaspoon dried basil
2 cups frozen mixed vegetables, thawed
1 1/2 cup cubed cooked chicken
1 1/2 cup shredded cheddar cheese, divided

directions

Cook the pasta as directed on package. Drain and set aside.

Meanwhile, combine the mayonnaise, milk, salt, and dried basil in a large bowl.

Stir in the thawed mixed vegetables, cooked chicken, and one cup of the Cheddar cheese. Mix well.

Add the cooked and drained pasta to the chicken mixture. Stir well.

Grease a 1 1/2 to 2 quart size microwave safe baking dish. Spread the chicken and pasta mixture evenly in the prepared dish. Sprinkle it with the remaining Cheddar cheese.

Cover the dish with plastic wrap, venting one corner just a little. Place in the microwave and cook on HIGH for 5-6 minutes or until the cheese is melted and the chicken is heated through.

Let stand, covered, for 5 minutes before serving for the pasta to absorb the sauce.

    I really, we couldn’t fathom the mayo so we substituted it w cream cheese heated the sauce prior to cooking. My son really liked it. He gives it a 5 for leftovers

    It was very very easy to make and we really enjoyed it but it really lacked in flavour...next time I'll add onion or garlic and herbs etc. Apart from that a real easy winner! I also baked it instead of microwaving it

    I love this recipe :) What a quick, easy way to dress up leftovers and make a tasty meal for my family! I adjusted the measurements to serve 6 (love that easy feature!) and paired this with crescent rolls, au gratin potatoes, and a green salad to produce a whole meal for my family in under an hour :) Will definitely be adding this one to my recipe box!

    I thought this was alright. All of my very picky team ate this (ages 3-10), some had 2nds.Easy enough to make. I also baked this (instead of micro) at 375 until it was slightly browned on top. Next time I think I might add a step and warm the milk, cheese and mayo mixture to make more of a cheese sauce to mix with the pasta. Just for more all over coverage. I also did half Miracle Whip, half mayo. I'd make it again.

    If hot dishes with mayo in it aren't your thing then I doubt you'll like this recipe. I recommend reducing the mayo or cutting it in half with sour cream, or something. Everyone at the table turned up their noses at this dish, including me and I love casseroles. Bummer to waste all of those ingredients.

    This is a nice family-friendly way to use up some extra leftover chicken. It had more flavor than I expected it to. I felt that it made four very light servings, so if you have hearty eaters you might want to double the recipe.

    This was so good. I used canned mixed veggies (drained) and multi grain penne pasta. Since I cooked the chicken in the crock pot, putting this together was so easy. It has a rich taste but you cannot distinguish the mayo.

    As simple as this dish was, it had a delicious flavor. i did substitute seasoned salt for the salt and "italian seasoning" for the basil. i tend to shy away from hot mayo-based dishes, but this one is very very good, and you'd never know it was mayo! i was pleasantly surprised! Yummy!
