ingredients
6 eggs
1 cup shredded cheese
1/2 teaspoon salt
1/8 teaspoon black pepper
1 package (10 ounce size) broccoli, thawed, drained, chopped
1 small onion, chopped
1/2 cup roasted red pepper, diced
directions
Whisk together eggs, cheese, salt and pepper; stir in vegetables.
Coat 10-inch frying pan with cooking spray and heat over medium heat. Add egg mixture, cover and cook 15 minutes, or until top is set.
Slide omelet onto serving platter.
