Pine Nut Pasta Salad

ingredients
2 cups pine nuts
2 tablespoons butter
1/2 pound alphabet pasta
1 cup black olives, sliced
1/2 cup parsley, minced
1/2 cup green onion, minced
1/3 cup green bell pepper
1/3 cup red bell pepper
1/4 cup fresh lemon juice
1/4 cup olive oil
freshly ground black pepper
Parmesan cheese, to taste
directions
In a large skillet, lightly toast the pine nuts in the butter; drain on paper towels and cool.
Cook the alphabet pasta in boiling water. Drain and rinse in cold water. Be extra careful not to overcook the pasta.
Very gently, mix together all ingredients. Cover and chill.

I made this for a party I went to. Everyone raved over it and I now get requests to bring it to every event I attend. It's yummy!
