Pasta Salad with Roasted Garlic Pesto Sauce

ingredients
1 pound shell pasta, medium size, cooked al dente, drained and chilled
1 jar roasted garlic pesto sauce
1/4 cup olive oil or as needed
2 large fresh tomatoes, chopped small as for salsa
8 ounces mozzarella, cut in chunks
8 ounces salami, sliced and then cut in 1/2" pieces
4 ounces well-aged provolone, cut in very small chunks, 1/4" is good
1 green bell pepper, finely chopped
1/4 cup red wine vinegar
1/2 cup black Greek olives, pitted and halved
1/4 cup Parmesan cheese, shredded
directions
Blend all ingredients except Parmesan and chill until serving time.
You may prefer to reserve some of the olive oil to drizzle over the completed salad before serving. Serve on bed of romaine lettuce, sprinkled with the Parmesan.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

Very very very good!!! I used rotini instead of shell pasta but that was the only change. Really liked the fresh basil flavor.

I have made this several times!! It is super yummy. I cannot find that brand of pesto so I used Classico brand. I also used kalamata olives. This is my all time favorate pasta salad recipe.

This is a great recipe. It sounds more complicated than it is. Very elegant, very tasty. We highly recommend it. Don't worry about the brand of pesto sauce mentioned - use whatever you have available.

Oops - forgot to add that I wasn't sure what was meant by black Greek olives - so I used Kalamata (I hope that was right - but if not, it was still fabulous)

I made this last night. I didn't have the particular brand of pesto sauce so I used something (I assume) that was similiar. It was fabulous. It's also a nice looking salad so it is good for impressing people!
