Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.

If you're in the mood for a light yet flavorful salad, wilted spinach salad is a great option. The combination of crisp spinach leaves and warm bacon dressing is a winning combination.
6 ounces fresh baby spinach
3 tablespoons apple cider vinegar
1/2 teaspoon sugar
1/4 teaspoon black pepper
1 pinch salt
8 slices bacon, coarsely chopped
1/2 medium red onion, sliced
1 clove garlic, minced
4 hard-boiled eggs, thickly sliced or quartered
Place the spinach in a large bowl.
Combine the vinegar, sugar, pepper, and salt in a bowl, mixing until the sugar and salt have dissolved. Set aside.
Heat a skillet over medium-high heat. Add the chopped bacon and cook, stirring frequently, until browned and crisp and the fat has rendered. Remove the bacon from the skillet with a slotted spoon and let drain on paper toweling.
Drain off all but 3 tablespoons of the bacon grease. Add the onion to the skillet and cook for 1 minute. Add the garlic to the skillet and cook, stirring constantly, for 15 seconds.
Stir the vinegar into the skillet. Use a spatula or wooden spoon to scrape up any browned bits from the bottom of the skillet. Stir constantly, for 1 minute.
Pour the hot vinegar dressing over the spinach and toss to coat the spinach in the dressing so it begins to wilt.
Divide the spinach between individual salad bowls. Sprinkle with the chopped bacon and sliced hard-boiled egg. Serve immediately.
Large Bowl: For tossing the spinach and dressing together.
Small Bowl: For mixing the vinegar, sugar, pepper, and salt until fully combined before adding to the skillet with the spinach.
Skillet: To cook the bacon and onions, and to create the warm bacon dressing.
Slotted Spoon: To remove the browned and crisp bacon from the skillet and allow excess grease to drain before adding to the salad.
Spatula or Wooden Spoon: For stirring and scraping the skillet to make sure all the flavors and browned bits are incorporated into the dressing.
Paper Towels: For draining the bacon after cooking and for wiping the skillet clean to remove excess grease.
Individual Salad Bowls: For serving the wilted spinach salad with warm bacon dressing.
