Crunchy Salmon And Spinach Salad

ingredients
4 ounces salmon fillet
1 cup fresh spinach
2 1/2 cups green leaf lettuce
1 small Maui sweet onion
2 Roma tomatoes
1/2 cup carrots
1/2 cup mandarin oranges
1 medium avocado
1/4 cup rice wine vinegar
1/4 cup soy sauce
2 tablespoons sesame oil
directions
On low/medium heat, cook salmon on grill pan for 30 minutes or until done and crispy. Put salmon in refrigerator while preparing salad.
For Dressing: Put equal parts rice wine vinegar and soy sauce together and add sesame oil. Shake well and put into refrigerator.
For Salad: Chop all other ingredients up and place into bowl. Take out chilled salmon from refrigerator and flake apart or cut into bite size chunks. Place salmon in salad mix and drizzle dressing.
