Greek Chicken or Lamb Marinade

You already know that a Greek marinade will be full of lemon and oregano. Try using the marinated chicken or lamb for kebabs or gyros topped with yogurt sauce.

ingredients

1 cup olive oil
4 teaspoons lemon juice
1 tablespoon chopped fresh oregano or dill
2 cloves garlic, crushed
salt, to taste

directions

Whisk together all the ingredients and place in a non-reactive container. Add chicken or lamb and marinate in the refrigerator for up to 4 hours.

Remove the meat from the marinade and grill, bake, or broil as desired.
