1/4 cup green olive oil
4 cloves garlic, crushed
1 1/2 pound medium shrimp, shelled and deveined
1 tablespoon fresh squeezed lemon juice
1/2 cup dry white wine
1/2 cup fresh Italian parsley, chopped
In a large frying pan, combine the oil and garlic; saute for a few minutes. Add the shrimp, lemon juice, and wine and toss. Cook the shrimp for a few minutes.
Sprinkle with the parsley and toss through the sauce. Remove from heat. Serve immediately alone, or with rice or pasta of your choice.
