ingredients

3/4 cup water
1/2 cup plain yogurt
1 tablespoon lemon juice
1 tablespoon canola oil
3 cups bread flour
1 1/2 teaspoon salt
2 teaspoons active dry yeast

directions

Combine all the ingredients in the bread machine in the order directed by the machine manufacturer. Select white bread or French bread setting with a light crust.

When the bake cycle is complete, remove the pan from the machine and let it cool on a rack for 5 minutes before removing the bread. Remove the bread and let it cool completely on a rack. Store in an airtight container at room temperature for up to 1 week.

recipe tips

Experiment with different types of flour or yogurt for different flavors.

Add a sprinkle of cornmeal or oats on top of the bread just before the baking cycle for extra crunch.

To check if the bread is done, tap the bottom of the loaf - it should sound hollow.

For a softer crust, brush the bread with melted butter immediately after baking.

common recipe questions

What is mock sourdough bread?

Mock sourdough bread is a bread recipe that mimics the tangy flavor and chewy texture of traditional sourdough bread, but is made using yogurt and lemon juice for a similar taste.

Can I use Greek yogurt instead of plain yogurt?

Yes, Greek yogurt can be used as a substitute for plain yogurt in this recipe, but it may result in a slightly different texture and tanginess.

What is the purpose of lemon juice in this recipe?

The lemon juice adds acidity to the dough, which helps to activate the yeast and develop the characteristic tangy flavor of sourdough bread. You can use white vinegar instead if desired.

Can I use whole wheat flour instead of bread flour?

Whole wheat flour can be used in place of bread flour, but the texture and rise of the bread may be slightly different.

How should I store the bread?

Store the cooled bread in an airtight container at room temperature for up to 1 week. It can also be frozen for longer storage.

Can I add additional ingredients like herbs or seeds?

You can customize the bread by adding herbs, seeds, or spices to the dough.

Is it necessary to let the bread cool completely before slicing?

Allowing the bread to cool completely helps to set the crumb and develop the best texture. Slicing it too soon can result in a gummy interior.

Do I need to proof the yeast before adding it to the dough?

No, you can add the active dry yeast directly to the dry ingredients in this recipe. The moisture from the other ingredients will activate the yeast during the mixing process.

tools needed

Bread Machine: For combining and kneading the ingredients to create the dough for the mock sourdough bread. The bread machine will also bake the bread once the dough has proofed.

Cooling Rack: Once the bread has finished baking in the bread machine, it needs to cool on a rack for 5 minutes before being removed from the pan. The bread should then cool completely on a rack before being stored.

Airtight Container: For storing the bread at room temperature for up to 1 week after it has cooled completely. Make sure the container is airtight to keep the bread fresh.

what goes with it?

Charcuterie Board: Pair this mock sourdough bread with a delicious assortment of cured meats, cheeses, fruits, and nuts.

Homemade Soup: Serve this bread alongside a warm bowl of homemade soup. The chewy texture of the bread is ideal for dipping into a steaming bowl of broth or creamy soup.

Artisanal Butter: Spread a thick layer of artisanal butter on a slice of this bread for a simple yet satisfying snack.

Herb-Infused Olive Oil: Dip slices of this bread into a dish of herb-infused olive oil for a light appetizer.

beverage pairings

Wine Pairings
Sauvignon Blanc: The crisp acidity and citrus notes in a Sauvignon Blanc can cut through the tanginess of the yogurt and lemon juice in this bread, while the herbal hints can complement the overall savory profile of the loaf.

Chardonnay: If you prefer a richer white wine, a Chardonnay with buttery and oaky characteristics can lend a smooth and creamy texture to this bread. Look for one with apple or pear notes to enhance the flavors of the recipe.

Merlot: For a red wine option, a fruit-forward Merlot with its plum and berry flavors can provide a nice contrast to the tangy elements of the bread. The soft tannins will not overpower the delicate flavors of the loaf.

Other Alcohol Pairings
Hefeweizen: The light and refreshing quality of a Hefeweizen can complement the slightly tangy and yeasty flavors of the bread. The hints of banana and clove in the beer can enhance the overall flavor of the loaf.

Cider: A dry cider with its fruity and slightly tart notes can be a great match for this bread. The crisp apple flavors can enhance the tanginess of the yogurt and lemon juice while balancing out the overall taste of the loaf.

Non-Alcoholic Pairings
Iced Chai Latte: The warm spices in a chai latte can complement the flavors of this bread, especially the cinnamon and nutmeg. The creaminess of the milk can also add a nice contrast to the tangy elements in the recipe.

Green Tea (Hot or Cold): The light and slightly grassy notes of green tea can be a refreshing pairing for this bread. The hint of sweetness in the tea can balance out the tanginess of the yogurt and lemon juice in the recipe.

The texture of this bread was wonderful, and the recipe so easy! It wasn't very tangy, though; should I add more lemon juice? I don't want to make the dough soggy....

  2. Pete REVIEW:

5 stars for taste, however the loaf is only 3" tall at the highest raise...Tried it at the french bread setting...Temp was 29C so ideal for baking....Anybody else get a mini loaf? The recipe was followed exactly....

  3. Guest Foodie REVIEW:

Yum. Ensure not to pack bread flour when scooping in measuring cup. Either spoon it in or add 1/4 cup water. I also used milk instead of water. I may add another teaspoon of salt next time.

  4. Joy REVIEW:

This is awesome as is, but is there a way to use whole grain flour instead?

    • We have not tested this recipe with whole grain flour so you'd have to experiment. In theory it should work with some minor tweaking (will most likely need more liquid)

Really great ! Many sourdoughs aren't tangy enough. This is perfect. Great texture. Will be using this recipe over and over.

  6. philnmary REVIEW:

I mixed it in the bread machine and then put in loaf pan and let it rise again and baked it @ 350 for 30 minutes. Delicious .
