It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


A great way to make a small batch of French toast is on the George Foreman grill! If you don't have cinnamon bread, add a pinch of cinnamon to the batter.


1 egg
1/4 cup milk
1/4 teaspoon vanilla extract
2 slices cinnamon bread
Lightly grease the George Foreman grill (do not use aerosol cooking spray) and preheat it as directed by the manufacturer.
Whisk together the eggs, milk, and vanilla in a shallow dish.
Dip the bread slices in the egg mixture, turning to coat the bread on all sides. Let any excess liquid drip off.
Place the coated bread on the grill. Close the lid and cook for 3 minutes or until golden brown.
Serve immediately with your choice of toppings such as butter, maple syrup, fruit sauce, whipped cream, powdered sugar, etc.

I didn't have cinnamon bread so I just used regular bread and sprinkled it with some cinnamon sugar after it was cooked. The method was mostly what I was interested in and I'm pleased to report that it made for a very nice french toast.
