Fish In White Wine Sauce

ingredients
2 cloves garlic
1 bulb fennel
1 red capsicum
1 yellow capsicum
1 green capsicum
1 large red chile
1 tablespoon butter
1/2 orange, finely grated rind and juice of
1/2 cup dry white wine
4 pieces white fish fillets -- such as snapper
basil leaves and orange slices to garnish
directions
Crush garlic. Trim and slice the fennel into thin strips. Halve, deseed and slice the capiscums into thin strips. Wearing rubber gloves halve deseed and finely chop the chili.
Melt the butter in a large pan. Add garlic, fennel capsicums and chilli. Cook for 5 minutes, stirring occasionally. Stir in orange rind and juice, wine and seasoning. Bring mixture to the boil.
Arrange the fish fillets on top of the vegetables. Cover the pan with a tight fitting lid. Reduce the heat slightly and simmer for 10 minutes, or until the fish is opaque and flakes easily when tested with the tip of the knife. Season.
Transfer the fish to warmed serving plates. Spoon the vegetables and sauce around the fish. Garnish with basil leaves and orange slices. Serve immediately.
