ingredients

1 1/2 pound pollock
3/4 cup sour cream
1/2 cup Parmesan cheese
1/4 cup melted butter
1/2 teaspoon salt
1/8 teaspoon black pepper

directions

Preheat the oven to 350 degrees F. Grease a 9x13-inch baking dish.

Place the fish in the greased baking dish in a single layer.

In a bowl, stir together the sour cream, Parmesan cheese, melted butter, salt, and pepper. Mix well then spread evenly over the pollock fillets.

Place the baking dish in the oven and cook, uncovered, at 350 degrees F for 30 minutes or until the fish is cooked and flakes easily with a fork.

Serve hot.

recipe tips

For added flavor, include a teaspoon of garlic powder or lemon zest in the sour cream mixture.

Make sure to not overcook the fish or it will end up dry.

Letting the fish rest for a few minutes after baking makes it easier to serve.

Try adding herbs like dill or parsley to the sour cream mixture.

Garnish with lemon slices or fresh herbs for an extra touch.

If the sour cream mixture is too thick, thin it with a little milk or lemon juice.

Try serving the baked pollock with rice or quinoa to soak up the delicious sauce.

Always check the fish for bones before baking, especially if using a different type of fish.

common recipe questions

Yes, other white fish like cod, haddock, or tilapia can be used as substitutes.

What can I use instead of sour cream?

Greek yogurt or creme fraiche can be used as alternatives.

Grated Romano or Asiago cheese can be used, or any hard, aged cheese.

Olive oil can be used as a healthier alternative, but it will change the flavor slightly.

White pepper can be used for a milder flavor.

How should I adjust the recipe for a spicier version?

Add a few dashes of Tabasco sauce or a pinch of cayenne pepper to the sour cream mixture.

Store in an airtight container in the refrigerator and reheat gently in the oven or microwave.

This might be a stupid question but do you cook the fish from froze?

    • If you are using frozen fish then, yes, you'll want to thaw it first.

  9. Nickijw REVIEW:

Fabulous!! The first time I made it exactly as the recipe read and it was delicious. I’m a garlic and lemon lover so the second time I did ad my own personal touches. I again followed the recipe with the addition of 1 garlic clove finely chopped and the juice of a half a lemon. I also substituted 1/4 mayonnaise for the sour cream as I didn’t have all of the sour cream on hand. This variation, in my biased opinion was oh so worth the extra steps. Either way I highly recommend to try this recipe. Thanks oh so much!

Itis surprisingly good. I used frozen pollock fillet and had enough sour cream but not even 2Tbs of Parmesan and I omitted butter, still came out delicious. I fried them yesterday but felt little greasy so I looked for baked or pan fried. Ifm glad I found this recipe. Thank you for sharing.

Pollock is pretty cheap to buy here so I've been trying to use it more. This was good but I thought it needed something. I think maybe adding bread crumbs on top might help.
