Apricot Cobbler

ingredients
1 1/2 cup biscuit baking mix (like Bisquick)
2 tablespoons brown sugar
1/2 teaspoon nutmeg
2/3 cup milk
1 tablespoon margarine, melted
2 cups apricot halves, packed in fruit juice, coarsely chopped and undrained
directions
Preheat oven to 400 degrees F. Spray an 8- x 8-inch baking dish with butter-flavored cooking spray.
In a large bowl, combine baking mix, brown sugar and nutmeg. Add milk and margarine. Mix well to combine. Spread mixture evenly into prepared baking dish. Pour undrained apricots evenly over batter.
Bake for 25 to 30 minutes. Place baking dish on a wire rack and allow to cool.
