1 medium onion, chopped
vegetable broth
10 ounces fresh spinach, rinsed, stemmed and coarsely chopped
32 ounces canned black-eyed peas drained
black pepper, to taste
cayenne or crushed red pepper flakes (optional)
In a large skillet, saute the onions in a little broth for a few minutes, until soft. Add the spinach to the skillet. Stir for a minute or two until it wilts. Add the black-eyed peas, black pepper, and cayenne if desired. Bring to a simmer on medium heat. Serve immediately.

This was a delicious, fast, easy dish for us. My husband and I are vegetarian. I added a can of diced tomatoes and some chunks of tofu and served it on rice. It made a nice main dish for us.

Before moving to the south I honestly had never had black eyed peas before. I have to say - I'm in love. I've tried them all sorts of ways since in this is one of my favorites. The flavors are fresh, it's ready in just a few minutes, and it goes great with a variety of entrees. Whether you love black eyed peas or are new to them - you can't go wrong with this recipe.
