Avocado And Walnut Salad In Pasta Shells

ingredients
8 jumbo pasta shells
Filling
2 medium avocados, pitted, peeled and diced small
1/2 cup finely chopped toasted walnuts
2 tablespoons chopped chives or shallots
1 tablespoon walnut oil or extra-virgin olive oil
1 tablespoon fresh lemon juice
salt and pepper, to taste
directions
In a large pot of boiling water cook pasta shells according to package instructions. Drain and rinse with cold water until cooled. Drain well on paper toweling.
While shells are cooking, prepare filling: In a medium bowl, combine all filling ingredients and toss gently.
Stuff filling into pasta shells. Cover with plastic wrap and refrigerate until ready to serve.
