Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Sesame Chicken Dip

ingredients
2 tablespoons soy sauce
4 teaspoons sesame oil
2 cloves garlic, minced
4 cups cooked chicken breast, shredded
3 packages (8 ounce size) light cream cheese
8 green onions, thinly sliced
2 cups baby spinach
1/2 cup salted peanuts, chopped
1 jar (10 ounce size) sweet and sour sauce
sesame rice crackers
directions
In a large resealable bag, combine the soy sauce, sesame oil and garlic. Add the cooked shredded chicken to the bag. Seal bag and turn to coat. Refrigerate for at least 1 hour.
Spread light cream cheese on a large serving platter. Top cream cheese with chicken mixture. Sprinkle sliced green onions, chopped peanuts, and baby spinach on top of chicken mixture. Cover and refrigerate for at least 2 hours.
Serve with crackers.

My wife and I were invited to an appetizer party and my sister-in-law brought this dip as an experiment. This recipe was excellent and a great appetizer.
