It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Fresh Strawberry Phyllo Tarts

ingredients
2 sheets thawed phyllo dough (18" X 14" size)
butter-flavored cooking spray
2 tablespoons sugar substitute
1 1/2 cup thawed sugar free, fat free whipped topping
12 ounces fresh strawberries, sliced
directions
Preheat oven to 350 degrees F. Lightly coat nonstick muffin pans with cooking spray.
Unfold one sheet of dough and coat it lightly but evenly with the cooking spray and 1/2 of the sugar substitute. Cut it in half, stacking the two halves together. Cut the second piece of dough in half and repeat coating it with cooking spray and sugar and stacking the dough so that you have 4 layers.
Cut the dough into 4-inch square pieces and gently press them into the prepared muffin cups. Coat the edges with cooking spray. Place the pan in the oven and bake at 350 degrees F for 10 minutes, or until golden.
Remove shells from pan and let cool completely. Fill each shell with 1/4 cup of the whipped topping and some of the sliced strawberries. Serve immediately.
