A more refined take on spaghetti and meat sauce. Cooking egg noodles with a mix of beef, onions, and tomatoes delivers flavor you won't find just by pouring sauce on top of pasta.
1 pound ground beef
1 small green bell pepper, seeded and chopped
1 small onion, chopped
3 1/4 cups uncooked medium egg noodles
1 can (14.5 ounce size) diced tomatoes, undrained
1 cup water
1/4 cup chili sauce
1 teaspoon salt
1/8 teaspoon black pepper
4 slices bacon, cooked and crumbled
Heat a large skillet over medium heat. Add the ground beef, bell pepper, and onion. Cook, stirring frequently, until the meat is no longer pink. Drain off any excess grease.
Add the uncooked noodles, tomatoes with their juice, water, chili sauce, salt, and pepper. Mix well. Cover the skillet and reduce the heat to a low simmer. Cook for 15-20 minutes or until the noodles are tender, stirring occasionally.
Stir in the bacon and serve.

A tasty departure from any number of ground beef meals even without the bacon crumbles, which I'm not accustomed to using. Mild spicy flavor offers just a bit of complement to tangy petit diced tomatoes. Be sure to ensure that this dish does not dry out too much while cooking because noodles can absorb a lot more than a cup of water. ⢠I served the meal with Spanish olives, which seemed to go well although certainly not everyone would like them.

A wonderful, slightly sweet, tomato taste. I substituted red & orange peppers (don't like the green ones). Also, added 1 can black beans, drained & rinsed. Cut back on the onion, if desired. Crumbled bacon may be added as a topping to the dish. Served with dark red seedless grapes, chilled & rinsed.
