Beef goulash is a hearty, rustic dish from Hungary. This version of the goulash doesn't have any tomatoes as some traditional versions do, but it's still delicious!

serves/makes:

ready in:
  2-5 hrs

ingredients

2 pounds boneless beef chuck
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon seasoned salt
1 teaspoon paprika
1/4 cup all-purpose flour
2 tablespoons oil
2 cups water
1 tablespoon Worcestershire sauce
1 clove garlic, minced
1 teaspoon dry mustard
1 bay leaf
1 teaspoon caraway seeds, (optional)
1 tablespoon vinegar

directions

Cut the beef into 1-inch cubes. Combine the salt, pepper, seasoned salt, paprika, and flour in a zip-top plastic bag. Add the beef cubes to the bag, seal, and shake the bag to coat the beef in the mixture.

Heat the oil in a Dutch oven over medium-high heat. Remove the beef from the flour and shake off any excess. Add the beef to the hot oil and cook, stirring occasionally, until the meat is browned on all sides.

Sprinkle the beef with any remaining flour mixture. Add the water, Worcestershire sauce, garlic, dry mustard, bay leaf, caraway seeds, and vinegar to the Dutch oven. Mix well. Cover the pot and let cook over low heat for 2 hours or until the meat is tender. Remove the bay leaf.

Serve hot over noodles or rice.
