It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Fritos may not give off the impression of refined taste, but the corn chips are actually a great way to give crunchy texture to dishes like this bean goulash.

1 pound ground beef
1 medium onion, chopped
1 medium bell pepper, seeded and chopped
1 can (15 ounce size) butter beans, rinsed and drained
1 can (15 ounce size) dark red kidney beans, rinsed and drained
1/4 cup vinegar
1 teaspoon dry mustard
1 cup ketchup
1/4 cup brown sugar
1 teaspoon chili powder
salt and pepper
1 bag (10 ounce size) Fritos corn chips, coarsely crushed
1 cup shredded Cheddar cheese
Preheat the oven to 350 degrees F.
Heat a skillet over medium-high heat. Add the ground beef and cook, stirring frequently, until the meat is cooked. Drain off any excess grease. Add the onion and bell pepper to the skillet. Cook, stirring frequently, until they begin to soften. Add the butter beans and kidney beans and mix well.
Transfer the meat mixture to a baking dish.
Add the vinegar, dry mustard, ketchup, brown sugar, chili powder, salt, and pepper to the skillet. Bring to a boil stirring frequently. Pour the mixture evenly over the meat in the baking dish.
Place the goulash in the oven and bake at 350 degrees F for 30 minutes.
Remove the baking dish from the oven. Evenly sprinkle the Fritos over the top then top with the shredded cheese. Return the goulash to the oven and bake for 10 additional minutes or until the cheese is melted and the goulash is bubbly.
Serve hot.

I omitted the butter beans because we don't care for them but otherwise followed to a T. Delish!
