Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

My daughter and I really liked this dish, which was a twist on what my mom used to cook. I thought it was a little bland so added: 1/2-1 t. chili powder, 1/2-1 t. Creole seasoning, salt and pepper to taste. Turned out well. Trying to freeze some of it.
