It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

A great pizza for a busy weeknight meal. This Mexican-flavored pizza starts with a pre-made crust and is topped with salsa, veggies, and lots of cheese.

1 prepared pizza crust (12 inch size)
1/2 cup salsa or picante sauce
1/2 cup sliced green bell pepper
1/4 cup sliced red onion
1 package (8 ounce size) shredded cheese, Mexican cheese blend, Monterey Jack, or Mozzarella
Preheat the oven to 450 degrees F.
Place the pizza crust on a baking sheet. Spread the crust evenly with the salsa. Top with the green bell pepper, onion, and shredded cheese.
Place the pizza in the oven and bake at 450 degrees F for 12-15 minutes or until the cheese is melted and bubbly in the middle.
Serve hot.
