Refried beans, cheese, and any variety of veggies are sandwiched between flour tortillas to make this double-decker delight.

2 (10-inch size) flour tortillas
1/2 cup refried beans, heated so they are spreadable
1/2 cup grated Cheddar or Monterey Jack cheese
Optional Toppings
onion, chopped
tomato, chopped
black olives, chopped
jalapeno peppers, chopped
sweet corn, chopped
salsa, for serving
sour cream, for serving
Heat the broiler and place the tortillas on the rack. Turn as needed until the tortillas are almost crisp. Remove from the oven and place on a work surface. Leave the broiler on.
Spread one tortilla with refried beans. Top with any desired toppings. Place the remaining tortilla over the top and sprinkle with cheese and any additional veggies.
Place the tortilla stack on a baking sheet. Place in the oven and broil until the cheese has melted (do not let the edges burn too much).
Remove from the oven and cut the pizza into wedges. Serve with salsa and sour cream, if desired.
