Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

This is sooo good with a caesar salad and a loaf of crusty, hot buttered Italian bread! Maybe with a glass (or two) of Chianti. I substitute 2 cans tomato paste for the tomato sauce.

An easy and delicious hearty soup- perfect for a weeknight family dinner. I had most of the ingredients already in the panty. Try it with turkey based Italian Sausage.
