Crab Waffle

ingredients
4 ounces potato, boiled and mashed
1 small dressed crab
OR
1 can (175 gram size) crab meat, drained
1 egg, separated
salt
black pepper
oil
directions
Mix the mashed potato and crab meat together, then add the egg yolk, salt and pepper. Whisk the egg white until stiff, then fold into waffle mixture.
Heat a waffle iron, brush with oil and heat again if necessary. Spoon a quarter of the waffle mixture into the iron and cook for 5 minutes until golden. Repeat with the remaining mix to make other waffles.
If you don't have a waffle iron, lightly oil four 4 inch cooking rings and set in a lightly oiled non-stick frying pan. Divide the mixture between the rings and press down well.
Cook over a medium heat for 3 minutes. Remove the rings, flip and cook the second side for 3-4 minutes until golden.
