Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

- #76295
ingredients
1 pound hot sausage (breakfast roll type)
1 cup sour cream
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
1 bunch green onions, chopped
1 jar (4 ounce size) diced pimentos (drained well)
directions
Fry up the sausage and crumble, cook until no longer pink. Drain off excess fat and put aside.
Mix sour cream, mayo, Parmesan cheese, onions, and pimentos. After sausage has cooled a bit, gently mix into sour cream mixture.
Place in baking dish and bake at 350 degrees F for 20-30 minutes until bubbly and heated through.
Serve with tortilla chips. Ingredients sound bizarre together, but absolutely delicious!
