ingredients
2 pounds yellow squash or zucchini, scrubbed
1 onion, peeled and chopped
1/3 cup vegetable oil
3 tablespoons tomato paste
1 teaspoon red wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1 pinch black pepper
2 scallions, chopped (green parts only)
black bread, for serving
directions
Scrub but do not peel zucchini. Slice thinly. Saute gently with onion in oil until quite soft. Add tomato paste, vinegar, sugar, salt, and pepper, and simmer for 5 minutes.
Puree in a blender and taste for seasoning. Chill until very cold and sprinkle with chopped scallions.
Serve on black bread.
