ingredients
1 package (8 ounce size) cream cheese, at room temperature
1 can (medium size) crushed pineapple, drained
1 cup finely shredded sweetened coconut
1 1/2 teaspoon ground ginger
2 teaspoons lemon juice
1/2 cup finely chopped nuts
assorted crackers
directions
Place the cream cheese in a mixing bowl and mix with an electric mixer on medium speed until light and fluffy.
Stir in the remaining ingredients by hand until mixed.
Spoon the dip into a serving bowl and place in the refrigerator, covered, for about an hour.
Remove from the refrigerator 30 minutes before serving. Serve with crackers.

This is sooo easy to make. Make sure your pineapple is very dry or it won't set up firm. If you want a sweeter dip, add 1/2 cup of confectioners sugar. You don't have to use frozen coconut, just make sure it's fresh. I only used 2tsp. of ginger and it is ok. It's really a big hit when served in a real pineapple. Use an electric knife to trim out a hole. Don't scrape too close to the edge. Coat with lemon juice to keep the color bright.
