Woo! This turned out great. First, make sure you are finely grating your own cheese - don't use that pregrated stuff in the bags as that will not be soft enough because it contains all the nasty fillers. Get some good cheese from the deli but it doesn't have to be the most expensive either. Just not grocery store cheap stuff since this is all about the cheese flavor. Second, make the recipe then chill the cheese-mayo mixture well, like overnight. THEN let it sit at room temp for about 15 minutes to soften up again before using.
the taste is good but not wild about the consistency and decided to use it as a spread instead of putting it on whole bread. Maybe the cheese could be grated so it was a "softer" consistency.
