ingredients

2 cups yellow squash, cooked, mashed, and drained
2 eggs, well beaten
1/2 cup evaporated milk
1/4 cup butter, melted
1 tablespoon sugar
1 tablespoon flour
3/4 cup Swiss cheese
salt and pepper
1 cup chopped red and green bell peppers
1/2 chopped onion
bread crumbs

directions

Spray baking dish with nonstick spray.

In a large bowl, combine all the ingredients except the breadcrumbs. Mix together well.

Pour into the prepared dish and top with the breadcrumbs. Bake in a 350 degrees F oven for 1 hour, or until the center is set.

This dish can be built the day before baking.
