ingredients
3 pounds whole pumpkin
1 tablespoon vegetable oil
2 tablespoons freshly squeezed lemon juice
1 tablespoon soy sauce
1 tablespoon brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
directions
Preheat the oven to 325 degrees F.
Cut the pumpkin, from top to bottom, into 1 to 1 1/2 inch thick slices. Discard the seeds and strings and spread slices on a lightly oiled baking sheet (save the seeds to roast).
Combine the rest of the oil with other ingredients and brush a little of this mixture onto the pumpkin slices.
Bake for about 25 minutes, then brush again. Turn, brush again, and bake until done, an additional 20 to 30 minutes. Serve warm.
