Ham & Pineapple Wrap

ingredients
4 flour tortillas (8 inch size)
4 tablespoons pineapple cream cheese
3 ounces thinly sliced low-fat ham
4 scallions, finely chopped
1 cup shredded mesclun or other lettuce
directions
Spread the tortillas on a clean work surface.
Divide the cream cheese among the tortillas and spread evenly, covering as much of the tortilla as possible.
Lay the ham slices on top of the cheese. Sprinkle with scallions and mesclun. Roll the tortilla up tightly to create a log shape. Wrap tightly in plastic and refrigerate for up to 12 hours.
Just before serving, cut the wrap in half crosswise on a slight diagonal.

I had bought pineapple cream cheese by mistake so I was looking for something to use it in. This worked perfectly! In fact, I'm going to continue to buy that cream cheese "by mistake" lol!

These are fantastic! I have made them several times for guests, and now I make them to take to work for lunch. I have trouble finding pineapple cream cheese, so I just use pineapple ice cream topping. I'm sure well-drained canned crushed pineapple mixed into the cream cheese would work well too. Thank you for posting this simple but terrific recipe!
