Baked Christophene Chayote

ingredients
2 chayote fruit
1 cup water
1/2 teaspoon salt
1 onion, chopped
1 teaspoon butter or margarine
freshly ground black pepper
non-stick cooking spray
1 teaspoon fresh bread crumbs
directions
Preheat oven to 350 degrees F.
Peel the squash, then cut them into small pieces and boil in the water, to which the salt has been added, until soft. Drain well, and puree with a fork. Add the onion, butter, and freshly ground pepper.
Spray a baking dish. Pour the pureed squash into it, sprinkle with bread crumbs, and bake in the preheated oven for 15 minutes. Serve as a side dish.

I made this last night and it was the first chayote recipe that my husband really liked a lot! It was easy, tasty and I'll surely make it again. Word of warning though, I'd suggest wearing plastic gloves when peeling the chayote. It has a strange sticky film when peeled that got on my hands and was hard to remove, even with soap, Dobie pad and salt scrub. It felt like an instant skin tightener! It didn't hurt, just felt bizarre and didn't come off easily.
