Carrot Zucchini Mushroom Loaf

ingredients
1 large onion, chopped
4 1/2 cups grated carrots or zucchini or a combination
1 pound mushrooms, chopped
5 eggs
4 cloves garlic, minced
1 cup breadcrumbs, divided
1 cup grated cheese, divided
1/4 cup butter, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons butter
2 teaspoons basil
1/2 teaspoon tarragon
1/2 teaspoon salt
1 teaspoon black pepper
directions
Preheat oven to 350 degrees F.
Saute garlic, mushrooms and onion in 1/4 cup butter until soft.
Combine half the bread crumbs and half the grated cheese and mix with all other ingredients. Press into a buttered loaf pan and sprinkle remaining bread crumbs and cheese over the top. Dot remaining butter on the top.
Cover with foil and bake for about 30 minutes. Remove foil and bake an additional 5 minutes or until golden brown.
