Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

ingredients
1 can (4.5 ounce size) chopped green chilies
1 pound grated Monterey Jack cheese (can be reduced fat)
1 pound grated sharp cheddar cheese (can be reduced fat)
4 eggs, separated
2/3 cup evaporated milk (can be skim)
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tomatoes, sliced
1 tablespoon flour
directions
Preheat oven to 350 degrees F.
Place chilies and cheese in a 2 qt. casserole dish, sprayed with cooking spray. Beat egg whites until stiff. Set aside.
Combine egg yolks, evaporated milk, flour, salt and pepper. Fold in egg whites. Pour over egg mixture and pierce with a fork to allow liquid to absorb into cheese.
Bake for 30 minutes. Place a layer of sliced tomatoes on top. Bake for 30 minutes more.
