Green Tomato Pie

ingredients
1 pie crust
9 hard green tomatoes
2 large onions
1/4 cup butter
1 pound Swiss cheese
1 pound Muenster cheese
salt
black pepper
2 tablespoons brown sugar
bread crumbs
wine or cider vinegar
directions
Remove stem end from tomatoes and slice thickly. Slice onions and saute in butter. Slice or grate cheeses.
Line 11" x 17" pan with some kind of crust (Regular flaky crust is great, but I usually do some sort of savory crumb crust, just 'cause it's easier. Bread or crackers and pecans are nice, with butter to hold it together).
Then make layers of bread crumbs, tomatoes, salt/pepper, sugar, cheese, and onions, starting and ending with bread crumbs. Sprinkle with vinegar, and top with crust or more crumbs drizzled with butter or olive oil. Bake at 375 degrees F till brown and bubbly.
NOTE: I think when I've made this I've reduced the amount of cheese--2 lbs sounds like a lot to me. And obviously the number of tomatoes depends on their size; 8-10 is based on good-sized ones.
