ingredients
1 medium potato (diced small)
1 tablespoon butter
1/3 medium cauliflower (sliced 1/2-inch thick)
16 cherry tomatoes, halved
directions
Put the diced potato in a pan of boiling water.
While it's cooking, melt the butter in a frying pan over a medium heat. Brown the cauliflower on both sides in the butter.
Just as the butter/cauliflower looks like it's going to burn, start squirting the halves of the first 8 cherry tomatoes into the pan. The idea is to get the seeds and juice squirting out, then you chuck the flesh/skin in after. Also, it's fun. Turn the heat down once the cauliflower/tomatoes are stirred in nicely.
By this time (5 minutes maybe), the potato should be cooked (firm not soggy). Drain the potato and add to the cauliflower/tomato mixture.
Squirt in the rest of the cherry tomatoes. Stir for another 30 seconds so everything is nicely mixed up.
Serve on its own, no salt, no pepper, nothing.
