Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

ingredients
1 large Chinese mushroom
2 ounces bamboo shoots
1 small cucumber
1 ounce carrot
1 small onion
2 ounces celery
1 ounce water chestnuts
3 ounces bean sprouts
3 tablespoons peanut oil
salt
1/2 teaspoon sugar
1 tablespoon soy sauce
1/2 tablespoon sherry
2 tablespoons water
1/4 teaspoon MSG
1/2 tablespoon cornflour, MIXED WITH
2 tablespoons water
1 teaspoon Gingelly oil
directions
Soak the Chinese mushroom in hot water for about 1/2 hour or until soft, then cut into slices. Slice bamboo shoots, cucumber, carrot, onion, celery, and water chestnuts. Clean the bean sprouts.
Heat the oil in the frying pan, cook the onion, mushroom and bamboo shoots for 1 minute, add celery, carrots and chestnuts, cook for another minute.
Then add bean sprouts, cook for one minute again. Add salt to taste, sugar, soy sauce, sherry, MSG and water, mix well, cook for another 2 minutes.
Stir in the cornflour mixed with the water and bring to boiling point. Boil for 1 minute. Sprinkle with Gingelly oil, turn into a heated dish and serve hot.
