ingredients
2 cups celery, cut into 1-inch slices
1/2 cup beef broth
2 egg yolks
1/4 teaspoon salt, to taste
1/4 teaspoon black pepper, to taste
2 tablespoons grated Romano cheese
directions
Preheat the broiler.
Put the celery and enough water to cover by 1-inch in a saucepan over medium-high heat. Bring to a boil and cook until the celery is tender. Drain well.
Place the celery in a baking dish.
In a bowl, combine the broth and egg yolks. Mix well with a wire whisk. Add the seasonings and stir to combine.
Pour the egg mixture over the celery in the dish. Sprinkle evenly with the Romano cheese.
Place the dish under the broiler and cook until golden brown and bubbly. Serve hot.
