Baked Chiles Rellenos

ingredients
whole green chiles roasted and peeled
2 2/3 cups flour
3 teaspoons baking powder
1/4 teaspoon baking soda
2 teaspoons salt
1/2 cup shortening
4 eggs
1 1/2 cup buttermilk
1 1/2 cup milk
1 or more lb. sharp cheddar cheese
directions
Preheat oven to 350 degrees F. Grease 9x13" pan.
In medium bowl, mix flour, baking powder, baking soda, and salt. Cut in shortening. Mix eggs and milk. Gently stir in eggs and milk.
Spread 2/3 batter in bottom of pan. Arrange chiles over batter. Sprinkle cheese over chiles Pour rest of batter on top. Bake 45 minutes.

I liked the concept, but I would rather not have so much bread. Next time I will make about 1/2 the amount of dough. Also, I used my fresh ground whole wheat and substituted applesauce for the shortening. I was very happy with these changes.

it is easier cause it doesn't involve frying andit tastes realy good I give it an A++
