ingredients
5 cups water
1 teaspoon salt
1/2 cup white rice, uncooked
4 tablespoons butter
4 large onions, diced
6 ounces Swiss cheese, grated
2/3 cup milk
directions
Preheat the oven to 325 degrees F.
Combine the water and salt in a saucepan. Bring to a boil. Slowly add the rice. Reduce heat, cover and simmer for just 5 minutes, drain well. Transfer rice to a mixing bowl.
Melt the butter in a large saute pan. Add the onions and cook over medium heat, stirring until soft, about 5 or 6 minutes. Add to the rice. Add the grated cheese and the half and half.
Stir until well mixed. Season to taste. Spread the mixture in a 9x13 baking dish. Place in oven and bake for 1 hour, until lightly golden on top.
