This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.


1 clove garlic, minced
1 1/2 tablespoon margarine or butter
2 cups sliced mushrooms
1/4 cup chopped red bell pepper
1 cup chicken broth
1/4 cup water
1/4 cup dry sherry or chicken broth
2 teaspoons dried minced onions
1/2 teaspoon salt
1 1/2 cup instant rice
2 tablespoons grated Parmesan cheese
1 tablespoon chopped parsley
Cook and stir garlic in hot margarine in large skillet 1 minute. Add mushrooms and red pepper. Cook, stirring occasionally, 2 minutes.
Add broth, water, sherry, onion flakes and salt. Bring to a boil. Stir in rice. Cover. Remove from heat. Let stand 5 minutes.
Fluff with fork. Sprinkle with grated cheese and parsley. Garnish as desired.

Love the combination of sherry and mushrooms so adding them to a rice dish seems quite appropriate. The recipe was really simple and full of flavor. And using instant rice makes this a quick recipe too!
