Captain's Casserole

ingredients
1 can cream of mushroom soup
1/2 cup milk
1 1/3 cup instant rice
1/2 teaspoon oregano
1 dash pepper
1 can (16 ounce size) tomatoes, RESERVING
1/2 cup tomato juice from tomato can
1 cup water
1 can (6 ounce size) tuna
1/2 onion, thinly sliced
2/3 cup grated Cheddar cheese
directions
In 8" x 12" baking dish spread raw rice on bottom. Top with oregano and pepper. Drain tomatoes and use juice plus the water to pour over rice. Arrange tomatoes on top of rice, then add sliced onions and tuna.
Heat soup, milk and cheese and then pour over top. Bake at 375 degrees F for 25 minutes.

My mom used to make Captain's Casserole when I was a kid in the '60s. It was my favorite. She passed away in '76 and I always thought it was her own creation and that I would never eat it again until today. Thank you Google and cdkitchen! Your recipe sounds just like hers, except she never used onions. I'm going to give it a try this week & get back to you.

This was easy to put together.The Husband and three of the four granddaughters( me too) liked it. The only thing the kids did not like was the onion.They all pulled it out,25 min. was not enough time to cook to onion done . Next time I will chop the onion and sprinkle it on.Also All I had was a 9x12 pan and it worked.Also it did not say anything about draining the tuna, but I did. Will make again. Thanks.
