It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Baked Lobster Tails

ingredients
1 cup butter, melted
4 teaspoons lemon juice
2 teaspoons rosemary, dried, crushed
1/2 cup bread crumbs
4 lobster tails, meat removed and cut in 1-inch cubes, shells reserved

About 45 minutes before serving:
Preheat oven to 350 degrees F. In a small bowl, mix butter, lemon juice and rosemary.
In a small bowl, combine crumbs with 1 tablespoon of the seasoned butter; set aside.
In a medium bowl, toss lobster with remaining seasoned butter. Place shells on an ungreased baking sheet. Spoon lobster into each shell. Sprinkle crumbs over the top.
Bake for 20 to 25 minutes or until meat is opaque and crumbs are golden brown (do not overcook).
Serve hot with lemon wedges.
