Sauteed Soft Shell Crab

ingredients
4 soft shell crabs, preferably 4.5" to 5" in size
1/2 cup pancake mix
4 tablespoons vegetable oil
directions
Dredge each crab thoroughly in the pancake mix.
Heat the vegetable oil in a skillet until a droplet of water spatters upon contact with the hot oil. Place each crab in the skillet. Cover and fry on both sides until golden.
Serve hot.

wOW. We were playing around and tried four softshell crabs four different ways and this one came out on top. The pancake mix was a suprise but it brought out the best flavers for sure.
