Mozzarella Potatoes

ingredients
4 potatoes, peeled
1/4 cup extra virgin olive oil, more as needed
1/2 cup Italian bread crumbs
salt and pepper
8 ounces shredded mozzarella cheese, more as needed
directions
Slice potatoes lengthwise into quarters. Rinse potatoes in cold water and pat dry.
Salt and pepper slices, then toss in olive oil and then in breadcrumbs. Place on a cookie sheet with sides. Bake at 350 degrees F for 1 hour or until browned.
Remove from oven and top slices with shredded mozzarella cheese. Return to oven until cheese melts.
