30-60 minutes
ingredients
2 pounds sauerkraut
6 large potatoes, divided
1 pound bacon
2 eggs
flour as needed
salt and pepper
directions
Brown sauerkraut in butter, slowly. Set aside. Can be done day before, and reheat before serving.
Boil half the potatoes, cool, peel and cube. Set aside. Can also be done day before, and then reheated.
Grate remaining uncooked potatoes. Add eggs, salt and pepper. Add enough flour to make mixture very thick. Bring a large pot of water to boil.
Put potato/flour mixture on a large dinner plate. With a small teaspoon, dip in boiling water and section small pieces of from plate and "plop" into water. Stir occasionally. Dip spoon in water frequently to keep from sticking. Boil until dumplings rise to top (This only takes a few minutes). Drain.
Fry bacon and crumble. Reserve drippings. Mix in a large bowl the cubed potatoes, sauerkraut, dumplings, bacon and drippings. You can add lots of freshly ground pepper to the final product if you like.
