Crushed New Potatoes With Olive Oil And Basil

ingredients
1 1/2 pound new potatoes
3 ounces good olive oil
sea salt and black pepper
3 tablespoons finely shredded basil leaves
1 ounce very thinly shaved Parmesan cheese
directions
Peel the potatoes and cook until just tender. Drain them well and return to the pan.
Add the olive oil then gently crush each potato with the back of a fork against the sides until it just bursts open.
Season well, then gently fold in the basil and Parmesan. Serve.
