Country club potatoes blend tender potatoes with garlic and a creamy cheese mixture. Quick to prepare and bake, this dish is a substantial addition to holiday dinners or weeknight meals.

3 pounds red potatoes
1/2 pound margarine
3 cups milk
2 cloves garlic, minced
1 tablespoon black pepper
1 tablespoon salt
1 pound white cheddar cheese, grated
1 package (8 ounce size) cream cheese
1 cup chives, diced
Boil potatoes until soft. Mix in all ingredients, reserving 3 ounces of the white cheddar cheese and all of the chives.
Place in greased casserole dish. Top with remaining white cheddar and chives. Bake at 300 degrees F for 15 minutes.
