Cajun Stuffed Potatoes

ingredients
2 pounds crawfish tails
3 baking potatoes
2 cups grated Cheddar cheese
1 cup sour cream
1/2 cup butter
1/4 cup red or purple onion, chopped
1/4 cup bacon bits
1 tablespoon Creole seasoning
salt and pepper, to taste
directions
Bake potatoes whole. Remove from oven, cut in half and let cool. When cool, scoop out center of potatoes into a large bowl (put potato skins aside).
Mix all other ingredients with potatoes, except 1 cup of cheese, then microwave mixture (4 minutes).
Put mixture in potato skins, then place potatoes in baking dish, sprinkle cheese and seasoning on top and bake (30 minutes) at 375 degrees F.
Garnish with parsley and green onion tops, if desired.
